Vegan Mac n Cheese Recipe

I hope everybody had wonderful meals yesterday.  I spent the holiday with my cousin Liz who cooked a delicious spread of vegan food.  Her recipes and creations were incredible - from the cornbread stuffing, mashed potatoes, slightly spicy sweet potatoes, crispy Brussel sprouts, and the cranberry sauce...delicious!  And the pies!  Though her skills far surpass mine in the kitchen...I leave you with one of my favorite vegan mac n cheese recipes that comes from my favorite restaurant in Boulder, Colorado - Fresh Thymes. 

Vegan Mac n Cheese Recipe Ingredients:

1 small white onion chopped

2 cloves garlic chopped

1 tbsp olive oil

1 cup cashews soaked in water for at least an hour

1/2 cup nutritional yeast

2 canned coconut water

1 tsp salt

1 tsp garlic powder

1 squeezed lemon Pasta


Add onion, garlic, and olive oil to pan and saute until translucent.

Set aside and allow to cool.

Add cashews, nutritional yeast, coconut water, salt, garlic powder, and lemon juice in a Vitamix and blend - gradually bringing up to top speed - for three minutes or until cashews are smooth.

Cook choice of pasta according to their instructions, cook al dente.

Add cooked pasta to pan and pour in desired amount of sauce.

Stir and simmer until sauce thickens.

Add any vegetables or garnishes that you prefer. (I recommend sauteed mushrooms.)
